What is gluten?
Gluten in the food industry often refers to storage proteins found in all grains. These storage proteins are beneficial in food production, adding flavor, texture or thickening.
Gluten-free refers only to specific storage proteins known to be harmful and potentially damaging for persons with gluten intolerances (celiac disease, dermatitis herpetiformis, and non-celiac gluten sensitivities). Gluten-free diets avoid the storage proteins found in wheat, rye, barley, and hybrids of these grains.
What does it mean to be certified gluten-free?
Receiving Gluten-Free Certification through the Gluten Intolerance Group’s Gluten-Free Food Service program helps ensure that the finished product contains 10 parts per million (10 ppm) or less gluten (5 ppm gliadin) and similar proteins from rye, barley, and hybrids of these grains, as measured by using testing methods that are accepted for gluten testing by analytical associations such as the AOAC, the American Association of Cereal Chemists (AACC), testing researchers, and other such agencies.

Certification is customized to the specific needs of each food service facility that works with GFFS, including factors such as facility size, number of locations, and the type of food service establishment.
The GFFS logo displayed in food services, on menus, etc, stands for the independent verification of quality, integrity, and safety of food preparation policies, procedures, education, and standards. Food services carrying the GFFS logo represent unmatched reliability for meeting strict gluten-free standards. GFFS sets the strictest gluten-free food service certification standards.
